My hubby and I came across this amazing pasta dish last fall when we were training for the Philadelphia Marathon. We were trying to find some new pasta dishes that would be yummy to make before a long run.
On Allrecipes.com called “Spinach Tomato Tortellini” and just had to try it! It was really easy to make too.
Here are the ingredients: 16 oz bag of cheese tortellini, 1 can of diced tomatoes, 1 cup of fresh spinach (chopped), 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 1/2 teaspoons dried basil, 1 teaspoon minced garlic, 2 tablespoons of all purpose flour, 3/4 cup milk, 3/4 cup heavy cream, and 1/4 cup grated parmesan cheese.
You boil the cheese tortellini first while putting the rest of the ingredients in a large sauce pan the pour in the tortellini when it is done cooking.
It is amazing and you can definitely get 4 servings out of the above picture. When the hubby and I are really carbo loading we will eat the whole dish though.
